Program/Major Specific Courses

FSHN 370: Life Span Nutrition

I learned about how physiological and metabolic changes affect nutrient needs across the lifespan. Coursework in this class allowed me to gain confidence and competency in taking nutrition assessments and providing practical recommendations to improve one's diet.

FSHN 451: Community Nutrition

Applying the knowledge acquired in this course, I learned to develop interventions that affect change and enhance wellness in diverse individuals and groups. I also learn how to advocate for provision of food and nutrition services as a part of public policy.

FSHN 312: Quantity Foods/Institutional Purchasing

This course taught me the basics of food safety and the skills involved in procurement responsibilities. I also demonstrated my knowledge of the course content by creating a menu and food safety plan as if I was the food service manager for a small operation.

FSHN 389: Nutritional Assessment

In this course I developed the knowledge and skills in the Nutrition Care Process to apply nutrition assessment methods across various settings. I also practiced evidence-based guidelines and protocols to identify and present the latest literature on childhood obesity.

FSHN 480: Nutrition in Exercise & Sport

To demonstrate my understanding of sports nutrition, I calculated the total resting energy expenditure, energy expended in exercise, and thermic effect of food for an athlete.

FSHN 485/486: Nutritional Biochemistry I/II

This 2-part course explores the chemistry, metabolism and biochemical functions of macronutrients and micronutrients. This knowledge generates a deeper understanding of how deficiency and excess intake of nutrients can cause short-term and long-term health consequences.
